The yield per hectare is 70-80 quintals of grapes and the vines are cultivated with the Apulian sapling training system with a planting density of 4500-5000 plants per hectare. The wine is vinified after destemming the grapes (without pressing) with the must fermenting in contact with the skins for 6-7 days at a temperature of 24-25° C. The vinification follows with a period of refinement of the wine partly in oak barriques and partly in steel.
