Consistent temperatures and chilly nights during the ripening period nurtured the fruit, allowing it to develop full flavors while preserving its natural acidity, a hallmark of this wine.\u003c\/p\u003e\u003cp\u003eHarvested on the 11th of April 2023, the fruit was meticulously processed, gently de-stemmed, and cold soaked for two days to extract optimal flavor and aroma. A portion underwent natural fermentation in new French oak barrels, while the rest fermented in small open fermenters before maturing in a combination of new and seasoned oak. After approximately seven months of aging in French oak barriques, 30% of which were new, the wine was carefully prepared for bottling.\u003c\/p\u003e\u003cp\u003eIn the glass, our 2023 Pinot Noir reveals a medium-bodied style, exuding lifted aromas of red cherries and spices, accompanied by subtle hints of forest floor that will evolve beautifully with bottle aging.
